Job Overview

The Cook plans, preps, sets up and provides quality service in all areas of restaurant production for all menu items supplied by outlet kitchen. The incumbent displays and presents all items designated by sous chef for service and ensures all mise en place are completed to the satisfaction of supervisor and sous chef. The Cook maintains and contributes to a positive work environment.

Key Responsibilities:

  • Set up workstation with required mise en place, tools, equipment and supplies according to standards.
  • Organize all of the various prep items needed from different areas to ensure that all items are in place and ready for service.
  • Prepare all menu items following recipes and yield guides, according to department standards
  • Follow established recipe and plating guide provided
  • Transport supplies from the storeroom and stock in designated areas.
  • Minimize waste and maintain controls to attain forecasted food cost.
  • Inspect the cleanliness and working condition of all tools, equipment and supplies. Ensure everything complies with standards.
  • Maintain and strictly abide by state sanitation and health regulations and hotel requirements.

Talent Profile:

  • Culinary college degree, Diploma or equivalent vocational training certificate.
  • 3 years experience in culinary field
  • Previous tournant experience or knowledge of grill, saut, garde manger, soups, pastry and vegetable prep.
  • Possess Food handling certification
  • Possess Sanitation certificate
